Ingredients
- 2 lbs boiled potatoes (in skins)
- 1 ½ lbs sausages
- 2 eggs, lightly beaten
- 1 ½ cups milk or half & half
- 1 cup Gouda cheese (white cheddar or Edam can be substituted)
- ¼ cup finely chopped fresh parsley
- Ground sweet paprika

Directions
Preheat oven to 375°F.
Peel and cut potatoes into ⅛-inch slices.
Heat skillet over medium heat.
Cut sausages into ¼-inch slices and add to hot skillet and cook until browned. Drain on paper towels.

Combine eggs, milk, ¾ cup of cheese (save ¼ cup for topping casserole), and parsley in a medium bowl
Lightly grease a medium casserole dish
Arrange half of the potato slices in a layer on the bottom of the dish
Arrange half of the sausage slices on top of the potato layer
Pour half of the cheese mixture over sausage and potatoes
Repeat layers
Sprinkle with paprika
Sprinkle remaining cheese on top
Bake uncovered for 30 minutes or until top is lightly browned

I made it, and it was good. One of Coty’s friends (Big Chester) ate all the leftovers! LOL

Oh, what cookbook would that be? I have a couple of German cookbooks but nothing by that author. I’d love to pick up a copy of it.
